Anaheim Salsa Verde Recipe

Ingredients:

6 green chiles (Anaheim, 3/4 lb)
1 & 1/4 c of tomatillos in can; drained
1 c of chicken stock
2 cloves garlic
1 c of packed cilantro sprigs

Instructions:

Prepare & heat the broiler. You arrange the chiles in broiler pan’s rack then broil them 2-inches from the heat. Turn frequently ’til skins blister & charred (approx 8-12 mins). You transfer them into bowl then stand w/ cover ’til cooled. You peel the chiles wearing rubber-gloves, cutting off & discarding ribs & seeds.

You remove the husks of tomatillos & rinse them under warmed water. Simmer the tomatilos in suacepan for 10 mins together w/ garlic & broth ’til tomatillos become tender.

You add the chiles into tomatillos-mixture then cool slightly. Transfer into blender then pulse ’til chopped coarsely. Add cilantro if desired, pulse ’til chopped finely. Season w/ salt.
