Apricot Salsa Recipe
Ingredients:
1/2 of roasted red bellpepper; seeded & chopped
1 onion (small); chopped
Oil (olive)
1 tomato (small); chopped
1 finely-minced Jalapeno
2 Tbsps of rum (dark)
2 chopped apricots
Apple-cider
Instructions:
You saute the onion w/ 1 Tbsp oil ’til translucent. YOu add the Jalapeno & tomatoes then saute for 5 more mins ’til cooked.
You add apricots & enough cider to have mixture covered. Boil ’til liquid is nearly absorbed then add the bellpeppers then stir. Pour rum in then flame.
