Cherry Salsa Recipe
Ingredients:
1 teaspoon of cornstarch
1 Tbsp of chopped cilantro
1 garlic clove; peeled & chopped finely
1 Tbsp of diced Jalapenos
1/4 c of finely-chopped onion (red)
1/4 c of coarsely-chopped dry cherries (tart)
1 & 1/3 c of frozen cherries (unsweetened)
Instructions:
Chop the frozen cherries coarsely. Thaw then drain & reserve 1 Tbsp of juice. Combine cherries, cilantro, garlic, Jalapenos, & onion in saucepan, mixing well.
You combine the cornstarch w/ reserved juice in bowl, stirring ’til smoothened. Add this into cherry-mixture. Stir often while cooking over mid-heat ’til mixture thickens. Cool.
