Chipotle Tomatillo Salsa Recipe
Ingredients:
Juice from a lime
3/4 teaspoon sugar
2 teaspoons of Kosher salt
1/2 c of water
Half bunch of cilantro stems & leaves; washed & patted-dry
2 dry chiles (chipotle)
2 garlic cloves; peeled
1 peeled onion (small); remove the ends then chop
1/2 lb of husked tomatillos; washed then roasted
Instructions:
In roasting tomatillos: You preheat thick skillet set over high-heat then add tomatillos ’til bit tender & charred. Remove tomatillos from skillet then cool. You remove & discard skin.
Combine water, cilantro, chipotles, garlic & onions in saucepan. Boil and then you reduce heat. Allow to simmer for 5-7 mins ’til chipotles are soft. You remove them from heat.
Transfer mixture into blender then add tomatillos, sugar, juice of lime & salt. Puree ’til smoothened.
