Pepper Corn Salsa Recipe
Ingredients:
1 pc seeded Jalapeno pepper; diced
Half bunch of chopped cilantro
Juice from 2 limes
1 teaspoon of pepper
1 teaspoon of salt
1 c of fresh-kernel corn
2 diced large tomatoes (yellow)
2 diced large tomatoes (red)
1 seeded bellpepper (green); grilled, then skinned & diced
Instructions:
Saute onions in oil in pan placed over mid-heat. Two minutes after, add chiles & green bellpeppers. Saute for two additional mins. Add pepper, salt, corn & tomatoes.
Saute them for two more mins. Remove spices from pan then transfer into container, cool. Have salsa refrigerated for about 3 hrs.
Add Jalapenos, cilantro & juice of lime prior to serving.
