Ginger Tomato Salsa Recipe
Ingredients:
Pepper
Salt
Oil (olive)
1 onion (red); diced
6 onions (green); thinly sliced
1 teaspoon of ginger powder
1/2 of seeded Jalapeno; chopped
1/4 teaspoon of cloves (ground)
1/2 teaspoon of cumin
1 teaspoon of cayenne pepper
1 teaspoon of paprika
3 Tbsps juice of lemon
1 & 1/2 c of sugar (brown)
1 c of vinegar (white)
2 Tbsps of garlic; chopped
4 Tbsps of peeled ginger; grated
5 tomatoes (Roma)
Instructions:
Slice tomatoes into half then season w/ pepper & salt. Arrange w/ cut-side-down on bake sheet then lightly brush w/ oil. Have them roasted in oven at three hundred degrees Fahrenheit for 60 mins ’til soft & caramelized. Cool then remove the skins. Slice into dice.
Have everything combined excluding onions. Place them in stainless saucepan then cook it over mid-heat for 5-10 mins ’til liquid turns into syrup.
Slightly cool then you pour this mixture over the tomatoes. Throw onions in then combine. Sit about 3 hrs.
