Last Minute Salsa Recipe
Ingredients:
Salt
1/4 c of vinegar cider
1/4 tsp of cumin (ground)
2 Tbsps of powdered chili
1/2 c of minced onion (white)
4 garlic cloves; minced
3-6 Jalapenos; seeded & stemmed
3 pounds of ripened red tomatoes; halved & washed
Instructions:
Have halved tomatoes roasted in bake pan for about 20 mins at four hundred degrees Fahrenheit. Cool then drain & discard extra juices.
Place the halved tomatoes in processor in 2 separate batches, pulse ’til pureed roughly. Add Jalapenos on the 2nd batch of pulsing. Pulse on & off.
Pour puree into 4-qt saucepan. Add vinegar, cumin , chili seasoning, onions & garlic. Simmer about 10 mins. Adjust seasonings as necessary. Refrigerate once done.
