Mango Pico de Gallo Recipe
Ingredients:
1/3 c of finely-chopped cilantro
3/4 teaspoon of salt
3 Tbsps of fresh juice of lime
1-2 stemmed Jalapenos; minced
3/4 c of diced onion (red)
1 large-sized firm, ripened tomato; seeded, cored & finely-chopped
1 large-sized firm, ripened mango; seeded & finely-chopped
6 roasted long mild green chiles
Instructions:
Combine all of the ingredients, except cilantro, mix well. Refrigerate w/ cover for 60 mins to allow flavors to thoroughly blend. Add cilantro prior to serving.
