Rhubarb Salsa Recipe
Ingredients:
1 teaspoon of grated ginger
2 Tbsps juice of lemon
2 Tbsps of honey
1 washed Jalapeno; seeded, stemmed & minced
1/3 c of finely-chopped onion (red)
1/4 c of finely-chopped onion (sweet)
1/2 c of diced bellpepper (green)
6 of sliced rhubarb (1/2″ thick each)
1 Tbsp of finely-shredded peel of an orange
1/4 c of water
Instructions:
In medium teflon saucepan, you combine peel, water & sugar. Heat ’til boiling over high-heat. You add sliced rhubarb then reduce heat into medium. Gently simmer for 20 mins ’til rhubarb becomes tender.
Remove skillet from heat then cool at room-temp. Transfer into processor w/ steel-blade, process ’til smoothened. You scrape puree onto bowl then add remaining ingredients. Blend thoroughly.
