Roasted Veggie Salsa Recipe
Ingredients:
1/4 c of fresh leaves of cilantro
2 Tbsps of salad-oil
1/4 c juice of lime
1 can of chipotle-chiles in adobo-sauce
3 tomatoes (large)
1 medium onion; quartered
3 garlic cloves; peeled
Instructions:
Add tomatoes, onions & garlic into heated fry pan placed over high-heat. Turn often while cooking ’til charred evenly. Cool once done.
Slice tomatoes into half in crosswise fashion then discard the seeds. Combine veggies, cilantro, juice of lime & chipotles, process ’til wanted consistency.
