Sweet and Sour Peach Salsa Recipe
Ingredients:
1 & 1/2 teaspoon of mixed pickled spice in tea bag
1 & 1/2 teaspoons of salt
1 c of vinegar (white)
1 c of sugar
3 peaches (fresh); sliced
2 peppers (green); seeded & chopped
2 c of chopped onion
2 c of sliced celery
3 lbs of ripened tomatoes
Instructions:
Pour over boiled water into tomatoes then leave about 60 secs. Drain then cover w/ ice water.
Have peaches peeled, chopped then measured to have 1 & 1.2-qts pulp. Transfer into thick pan then add remaining ingredients.
Slowly boil, stirring occasionally for 2 hrs ’til thickened. You remove the spices & discard. You pour onto sterilized jars leaving 1/4″ headspace.
Place over boiling water-bat & process for about 10 mins. Cool.
